Outside of Japan there are few better places to experience a diversity of Japanese cuisine than in Singapore. The small island-nation has become a hotspot for world class chefs and just about any variation on Eastern and Western cookery which the savviest gourmets can expect. There is something rare and magical about those eateries which manage the tricky art of preparing cuisine to rival that of the country from where the recipes come.
Shabuya is the eatery of choice for those who truly know and love authentic Japanese cuisine. The name itself refers to the traditional Japanese 'Shabu Shabu'. Shabu Shabu has become one of the great culinary treasures of Japanese cookery and the word comes from the sound the pot makes as it accepts and cooks each delectable ingredient, literally translating as 'Swish Swish'.

Before you get to the marvellous delicacies of the House of Shabuya, you'll be suitably impressed by the stylish decor. The sibling eatery, Tajimaya, located under the same roof, offers a rustic charm perfectly suited to its fine iterations of rustic Japanese delights, but the decor of Shabuya offers a beautiful cosmopolitan contrast. Inside, diners will find a perfectly pitched minimalism which speaks to the contemporary eye while never being anything less than of Japan at its most urbane and sophisticated. This is Japanese dining for the 21st century foodie.
Before you begin the journey of delights which come in tempting and tasty from the marvellous kitchen, you'll find yourself seated at one of the very elegant and stylish tables. Shabuya has more than one level and there are certain coveted seats.
If you're amongst those who seek to have spectacular views of the waterfront facing Universal Studios, or, perhaps, want to enjoy a romantic meal for two in the only banquette which has been designed to seat a single couple, then it's advisable to book as early as you can.
One of the reasons for Shabuya's enduring success, and its large following by those who seek the finest Japanese food, is its combination of known and unknown delights.
Although you'll find sashimi (both delicious fish and beef), as well as other meticulously crafted morsels, the Shabu Shabu is all about the inspiring rarity of lesser known flavours and textures - which is not to say that the dishes haven't been created with a traditional talent for balance and perfect preparation, just that this is a style of Japanese cookery which transcends common notions of regional food.
For a fine dining experience of myriad flavours of lingering deliciousness, you might well opt for one of the set menus. | .jpg) |
No matter whether you prefer meat, like top quality Wagyu beef, or lean towards the best from the sea, or even like to sample a little of everything, there is an option for you.
Shabuya's comprehensive menu of course offers a variety of Tempura, with favourites including Crispy Soft Shell Crab, Deep Fried Bean Curd, Cold Soba, Bibimbap - rice in hot stone and others to satisfy the Japanese Cuisine aficionado. In addtion, a wide range of delicious dishes including King Crab, Jumbo Prawns, Hokkaido Scallops and Cod Fish are available.
In amongst it all, you'll find exalted additions of tempura as you've never know it, kimchi and the much loved namuro. Perhaps you'll opt for a malt beer or a sake to accompany you through the journey of flavours, or perhaps just the occasional 'sake' will be all you need to experience the manifold marvels of a meal at Shabuya.
Whatever you do, leave some room for the astounding desserts. From the aromatically satisfying green tea ice-cream to the black sesame ice-cream, to the variety of mochi, the final sweet touch will only leave you wondering what other goodies to try when you return.
